In case you haven't seen my pumpkin posts lately, I have to warn you that I'm kind of in love with that squash. It signals the start of autumn and warns me that I must prepare for my winter hibernation (and, by hibernation, I mean that the only time I get out of my pajamas and leave the house is for work).
So, I was happy to find that Steph over at Drinkers De-Lite had done a makeover on mojitos to make them more fall friendly!
- 1 tablespoon sugar
- 10 mint leaves
- 1 tablespoon pumpkin
- 1/2 a lime
- 1 1/4 ounces light rum
- 2 ounces club soda
- Muddle the sugar and mint leaves in the glass.
- Add the pumpkin, juice from the lime half, and rum to the glass and mix well.
- Pour in the club soda and gently stir to mix.
- Add ice and serve.
I know this seems like an odd combination, and it is definitely different, but it just adds a new spin on an old drink. My only caution would be that if you have texture issues, you probably won't enjoy this drink. Even when mixed well, you may get the occasional bit of pumpkin, which I know can really bother some people.
Now, is it weird if I drink this cold beverage while wrapped in a blanket by the fireplace?
