♪♪ You put the lime in the coconut and toast it all up... ♪♪ Oh, hey! Didn't see you there!
There's no lime in this coconut, and it's not boozy either, and it isn't so much of a recipe as it is a...how shall we say this delicately...an instruction in making toasted coconut to use in recipes without burning down the house.
Now, I'm not saying you would be the one to burn down the house. The person you need to be worried about starting a house fire is probably me. And no, I'm not an arsonist, I have just forgotten I had things in the oven once or twice. While the broiler was on. And smoke alarms may or may not have alerted the whole neighborhood to the fact that I cannot be trusted with a broiler.
This how-to doesn't use a broiler though, so I think we're all fairly safe here. *collective sigh of relief*
As a small tangent, I thought for some time that you bought toasted coconut at a store. Don't ask me where I thought you picked it up at the store, maybe there was a bag of it sitting right next to the normal shredded coconut?, but it didn't even cross my mind until I was 22 or so that you actually make it...yourself...with non-toasted coconut. Really, you'd think they never let me out of the house growing up!
Now, once you've toasted up some coconut, hop on over to my Mini Spring Cheesecakes post and put it to good use!
